Ingredients

  • 500g fresh snails
  • 3 slices ginger
  • 2 cloves garlic, minced
  • 2 green onions, chopped
  • 1 tablespoon Shaoxing wine
  • 2 tablespoons soy sauce
  • 1 tablespoon dark soy sauce
  • 1 tablespoon sugar
  • 1 star anise
  • 1 cinnamon stick
  • 1 teaspoon Sichuan peppercorns
  • 2 cups water

Instructions

  1. Thoroughly clean the snails and remove any dirt or impurities. Soak them in water for 1 hour, then rinse and drain.
  2. In a wok or large pot, heat some oil over medium heat. Add the ginger, garlic, and green onions, and stir-fry until fragrant.
  3. Add the snails to the wok and stir-fry for 2-3 minutes.
  4. Pour in the Shaoxing wine, soy sauce, dark soy sauce, and sugar. Stir to coat the snails evenly.
  5. Add the star anise, cinnamon stick, Sichuan peppercorns, and water. Bring to a boil, then reduce heat to low and simmer for 1 hour, or until the snails are tender.
  6. Once the snails are cooked, remove them from the sauce and place on a serving dish.
  7. Turn up the heat and reduce the sauce until it thickens. Pour the thickened sauce over the snails.
  8. Serve the Hong Shao Lu Huan hot and enjoy!
