Ingredients
- 2 large eggplants, cut into chunks
- 200g minced pork
- 3 cloves garlic, minced
- 1 tablespoon ginger, minced
- 2 green onions, chopped
- 2 tablespoons soy sauce
- 1 tablespoon Shaoxing wine
- 1 tablespoon sugar
- 1 cup chicken broth
- 2 tablespoons vegetable oil
- Salt and pepper to taste
Instructions
- Heat vegetable oil in a wok over medium heat. Add minced pork and stir-fry until browned.
- Add garlic, ginger, and green onions. Stir-fry until fragrant.
- Add soy sauce, Shaoxing wine, and sugar. Stir to combine.
- Add eggplant chunks and coat them with the pork mixture.
- Pour in the chicken broth and bring to a simmer. Cover and cook for 15-20 minutes, or until the eggplant is tender.
- Season with salt and pepper to taste. Serve hot.
