Ingredients

  • 2 large eggplants, cut into chunks
  • 200g minced pork
  • 3 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 2 green onions, chopped
  • 2 tablespoons soy sauce
  • 1 tablespoon Shaoxing wine
  • 1 tablespoon sugar
  • 1 cup chicken broth
  • 2 tablespoons vegetable oil
  • Salt and pepper to taste

Instructions

  1. Heat vegetable oil in a wok over medium heat. Add minced pork and stir-fry until browned.
  2. Add garlic, ginger, and green onions. Stir-fry until fragrant.
  3. Add soy sauce, Shaoxing wine, and sugar. Stir to combine.
  4. Add eggplant chunks and coat them with the pork mixture.
  5. Pour in the chicken broth and bring to a simmer. Cover and cook for 15-20 minutes, or until the eggplant is tender.
