Ingredients

  • 4 fish fillets (such as carp or sea bass)
  • 3 slices of ginger
  • 3 green onions, cut into 2-inch pieces
  • 3 tablespoons soy sauce
  • 2 tablespoons Shaoxing wine
  • 1 tablespoon sugar
  • 1 tablespoon cooking oil
  • 1 cup water

Instructions

  1. Pat the fish fillets dry with paper towels and place them in a shallow dish.
  2. Evenly scatter the ginger and green onions over the fish fillets.
  3. In a small bowl, mix together the soy sauce, Shaoxing wine, and sugar. Pour the mixture over the fish fillets.
  4. Heat the cooking oil in a wok or large skillet over medium heat. Carefully add the fish fillets, ginger, and green onions to the wok.
  5. Pour the water around the edges of the wok. Cover and simmer for 15-20 minutes, or until the fish is cooked through and the sauce has thickened.
  6. Transfer the fish and sauce to a serving platter. Garnish with additional green onions, if desired.
