Hong Shao Zhuzhu (fragrant Manchu Braised Pork Knuckle)
Hong Shao Zhuzhu, also known as Fragrant Manchu Braised Pork Knuckle, is a traditional dish from Manchu Cuisine. This dish features tender, succulent pork knuckle braised in a flavorful and aromatic sauce, making it a popular choice for special occasions and family gatherings.
Ingredients
- 1.5 kg pork knuckle
- 6 slices ginger
- 3 cloves garlic, minced
- 4 green onions, cut into 2-inch pieces
- 1 cup Shaoxing wine
- 1/2 cup soy sauce
- 1/4 cup rock sugar
- 2 star anise
- 1 cinnamon stick
- 1 tbsp Sichuan peppercorns
- 4 cups water
Instructions
- In a large pot, blanch the pork knuckle in boiling water for 5 minutes. Remove and rinse under cold water.
- Heat some oil in the pot and sauté the ginger, garlic, and green onions until fragrant.
- Add the pork knuckle back into the pot and pour in the Shaoxing wine, soy sauce, and rock sugar. Stir to combine.
- Add the star anise, cinnamon stick, Sichuan peppercorns, and water. Bring to a boil, then reduce heat to low and simmer for 2 hours, or until the pork is tender.
- Once the pork is tender, remove it from the pot and let it rest for 10 minutes before slicing.
- Strain the braising liquid and reduce it over high heat until thickened. Pour the sauce over the sliced pork knuckle and serve.
