Ingredients

  • 1.5 kg pork knuckle
  • 6 slices ginger
  • 3 cloves garlic, minced
  • 4 green onions, cut into 2-inch pieces
  • 1 cup Shaoxing wine
  • 1/2 cup soy sauce
  • 1/4 cup rock sugar
  • 2 star anise
  • 1 cinnamon stick
  • 1 tbsp Sichuan peppercorns
  • 4 cups water

Instructions

  1. In a large pot, blanch the pork knuckle in boiling water for 5 minutes. Remove and rinse under cold water.
  2. Heat some oil in the pot and sauté the ginger, garlic, and green onions until fragrant.
  3. Add the pork knuckle back into the pot and pour in the Shaoxing wine, soy sauce, and rock sugar. Stir to combine.
  4. Add the star anise, cinnamon stick, Sichuan peppercorns, and water. Bring to a boil, then reduce heat to low and simmer for 2 hours, or until the pork is tender.
  5. Once the pork is tender, remove it from the pot and let it rest for 10 minutes before slicing.
  6. Strain the braising liquid and reduce it over high heat until thickened. Pour the sauce over the sliced pork knuckle and serve.
