Ingredients
- 300g sweet potato noodles
- 2 tbsp soy sauce
- 1 tbsp sesame oil
- 1 tbsp rice vinegar
- 1 tsp sugar
- 1/2 cup sliced green onions
- 1/4 cup shredded carrots
- 1/4 cup sliced cucumber
- 1/4 cup chopped peanuts
Instructions
- Boil the sweet potato noodles according to package instructions. Drain and rinse with cold water.
- In a small bowl, mix together soy sauce, sesame oil, rice vinegar, and sugar to make the dressing.
- In a large bowl, toss the cooked noodles with the dressing, green onions, carrots, and cucumber.
- Garnish with chopped peanuts before serving.
