Ingredients

  • 1 cup long-grain white rice
  • 2 cinnamon sticks
  • 1 cup granulated sugar
  • 5 cups water
  • 1 cup milk (or almond milk for a vegan option)
  • 1 teaspoon vanilla extract

Instructions

  1. In a blender, combine the rice, cinnamon sticks, and 2 cups of water. Blend until the rice and cinnamon are roughly ground.
  2. Add the remaining water and continue blending for 1-2 minutes.
  3. Strain the mixture through a fine-mesh sieve or cheesecloth into a pitcher, pressing on the solids to extract as much liquid as possible.
  4. Stir in the sugar, milk, and vanilla extract until the sugar is completely dissolved.
  5. Refrigerate the horchata for at least 2 hours before serving. Serve over ice and garnish with a sprinkle of ground cinnamon, if desired.
