Horsegram Biryani (ulavacharu Biryani)
Horsegram Biryani, also known as Ulavacharu Biryani, is a flavorful and nutritious dish from Telugu Cuisine. This biryani is made with horsegram, a protein-rich legume, and aromatic spices, creating a delicious and wholesome meal.
Ingredients
- 2 cups horsegram
- 2 cups basmati rice
- 1 large onion, thinly sliced
- 1 tomato, chopped
- 1/2 cup yogurt
- 1 tablespoon ginger-garlic paste
- 1 teaspoon red chili powder
- 1/2 teaspoon turmeric powder
- 1 teaspoon biryani masala
- 2 tablespoons ghee
- 4 cups water
- Salt to taste
Instructions
- Soak horsegram in water for 4-6 hours.
- Wash and drain the basmati rice.
- In a large pot, heat ghee and sauté the sliced onions until golden brown.
- Add the chopped tomato, ginger-garlic paste, red chili powder, turmeric powder, and biryani masala. Cook until the tomatoes are soft.
- Add the soaked horsegram, drained rice, yogurt, and salt. Mix well.
- Pour in the water and bring to a boil. Then, reduce the heat, cover, and simmer for 20-25 minutes until the rice and horsegram are cooked.
- Once done, fluff the biryani with a fork and let it sit for a few minutes before serving.
