Horsegram Biryani (ulavacharu Biryani)

Horsegram Biryani, also known as Ulavacharu Biryani, is a flavorful and nutritious dish from Telugu Cuisine. This biryani is made with horsegram, a protein-rich legume, and aromatic spices, creating a delicious and wholesome meal.

Ingredients

  • 2 cups horsegram
  • 2 cups basmati rice
  • 1 large onion, thinly sliced
  • 1 tomato, chopped
  • 1/2 cup yogurt
  • 1 tablespoon ginger-garlic paste
  • 1 teaspoon red chili powder
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon biryani masala
  • 2 tablespoons ghee
  • 4 cups water
  • Salt to taste

Instructions

  1. Soak horsegram in water for 4-6 hours.
  2. Wash and drain the basmati rice.
  3. In a large pot, heat ghee and sauté the sliced onions until golden brown.
  4. Add the chopped tomato, ginger-garlic paste, red chili powder, turmeric powder, and biryani masala. Cook until the tomatoes are soft.
  5. Add the soaked horsegram, drained rice, yogurt, and salt. Mix well.
  6. Pour in the water and bring to a boil. Then, reduce the heat, cover, and simmer for 20-25 minutes until the rice and horsegram are cooked.
  7. Once done, fluff the biryani with a fork and let it sit for a few minutes before serving.
