Hot And Sour Noodle Soup

Ingredients

  • 8 oz rice noodles
  • 4 cups vegetable broth
  • 1/4 cup rice vinegar
  • 2 tbsp soy sauce
  • 1 tbsp chili garlic sauce
  • 1 tsp sesame oil
  • 1 cup sliced shiitake mushrooms
  • 1/2 cup sliced bamboo shoots
  • 1/2 cup firm tofu, cubed
  • 1/4 cup sliced green onions
  • 2 tbsp cornstarch mixed with 2 tbsp water
  • Salt to taste
  • White pepper to taste

Instructions

  1. Soak the rice noodles in hot water according to package instructions. Drain and set aside.
  2. In a large pot, bring the vegetable broth to a simmer. Add the rice vinegar, soy sauce, chili garlic sauce, and sesame oil.
  3. Add the shiitake mushrooms, bamboo shoots, and tofu to the pot. Simmer for 5 minutes.
  4. Stir in the cornstarch mixture to thicken the soup. Season with salt and white pepper to taste.
  5. Divide the rice noodles among serving bowls and ladle the hot and sour soup over the noodles.
  6. Garnish with sliced green onions and serve hot.
