Ingredients
- 8 oz rice noodles
- 4 cups vegetable broth
- 1/4 cup rice vinegar
- 2 tbsp soy sauce
- 1 tbsp chili garlic sauce
- 1 tsp sesame oil
- 1 cup sliced shiitake mushrooms
- 1/2 cup sliced bamboo shoots
- 1/2 cup firm tofu, cubed
- 1/4 cup sliced green onions
- 2 tbsp cornstarch mixed with 2 tbsp water
- Salt to taste
- White pepper to taste
Instructions
- Soak the rice noodles in hot water according to package instructions. Drain and set aside.
- In a large pot, bring the vegetable broth to a simmer. Add the rice vinegar, soy sauce, chili garlic sauce, and sesame oil.
- Add the shiitake mushrooms, bamboo shoots, and tofu to the pot. Simmer for 5 minutes.
- Stir in the cornstarch mixture to thicken the soup. Season with salt and white pepper to taste.
- Divide the rice noodles among serving bowls and ladle the hot and sour soup over the noodles.
- Garnish with sliced green onions and serve hot.
