Hot and Sour Rice Noodles (酸辣米线)
酸辣米线 (Hot and Sour Rice Noodles) is a popular dish in Henan Cuisine, known for its spicy and tangy flavors. It's a comforting and satisfying meal that is perfect for any time of the day.
Ingredients
- 300g rice noodles
- 100g lean pork, thinly sliced
- 2 eggs, beaten
- 50g wood ear mushrooms, soaked and sliced
- 50g bamboo shoots, julienned
- 3 green onions, chopped
- 2 tbsp soy sauce
- 2 tbsp Chinkiang vinegar
- 1 tbsp chili oil
- 1 tsp Sichuan peppercorns
- 1 tsp sugar
- 1/2 tsp salt
- 1/2 tsp ground white pepper
- 4 cups chicken broth
- 2 tbsp vegetable oil
Instructions
- In a bowl, mix the soy sauce, Chinkiang vinegar, chili oil, Sichuan peppercorns, sugar, salt, and ground white pepper. Set aside.
- Cook the rice noodles according to the package instructions. Drain and set aside.
- In a wok, heat the vegetable oil over high heat. Add the pork and stir-fry until cooked. Push the pork to the side of the wok and pour the beaten eggs into the wok. Scramble the eggs until set.
- Add the wood ear mushrooms, bamboo shoots, and green onions to the wok. Stir-fry for 2-3 minutes.
- Pour in the chicken broth and the prepared sauce. Bring to a boil.
- Add the cooked rice noodles to the wok. Stir to combine and simmer for 5 minutes.
- Divide the hot and sour rice noodles into bowls and serve hot.
