Hot and Sour Rice Noodles (酸辣米线)

Ingredients

  • 300g rice noodles
  • 100g lean pork, thinly sliced
  • 2 eggs, beaten
  • 50g wood ear mushrooms, soaked and sliced
  • 50g bamboo shoots, julienned
  • 3 green onions, chopped
  • 2 tbsp soy sauce
  • 2 tbsp Chinkiang vinegar
  • 1 tbsp chili oil
  • 1 tsp Sichuan peppercorns
  • 1 tsp sugar
  • 1/2 tsp salt
  • 1/2 tsp ground white pepper
  • 4 cups chicken broth
  • 2 tbsp vegetable oil

Instructions

  1. In a bowl, mix the soy sauce, Chinkiang vinegar, chili oil, Sichuan peppercorns, sugar, salt, and ground white pepper. Set aside.
  2. Cook the rice noodles according to the package instructions. Drain and set aside.
  3. In a wok, heat the vegetable oil over high heat. Add the pork and stir-fry until cooked. Push the pork to the side of the wok and pour the beaten eggs into the wok. Scramble the eggs until set.
  4. Add the wood ear mushrooms, bamboo shoots, and green onions to the wok. Stir-fry for 2-3 minutes.
  5. Pour in the chicken broth and the prepared sauce. Bring to a boil.
  6. Add the cooked rice noodles to the wok. Stir to combine and simmer for 5 minutes.
  7. Divide the hot and sour rice noodles into bowls and serve hot.
