Ingredients

  • 1/4 cup bamboo shoots, sliced
  • 2 tablespoons soy sauce
  • 2 tablespoons rice vinegar
  • 1 tablespoon cornstarch, dissolved in 2 tablespoons water
  • 1 teaspoon sesame oil
  • 1/2 teaspoon white pepper
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon chili flakes (adjust to taste)
  • 2 eggs, beaten
  • 3 green onions, thinly sliced

Instructions

  1. In a pot, bring the broth to a simmer over medium heat.
  2. Add the mushrooms, tofu, and bamboo shoots to the pot. Cook for 5 minutes.
  3. Stir in the soy sauce, rice vinegar, cornstarch mixture, sesame oil, white pepper, ground ginger, and chili flakes. Simmer for another 5 minutes.
  4. Slowly pour the beaten eggs into the soup while stirring gently to create egg ribbons.
  5. Remove the pot from the heat and stir in the green onions.
  6. Adjust the seasoning to taste with more soy sauce, vinegar, or white pepper if desired.
