Ingredients
- 4 cups chicken or vegetable broth
- 1/2 cup shiitake mushrooms, sliced
- 1/2 cup firm tofu, diced
- 1/4 cup bamboo shoots, sliced
- 2 tablespoons soy sauce
- 2 tablespoons rice vinegar
- 1 tablespoon cornstarch, dissolved in 2 tablespoons water
- 1 teaspoon sesame oil
- 1/2 teaspoon white pepper
- 1/2 teaspoon ground ginger
- 1/4 teaspoon chili flakes (adjust to taste)
- 2 eggs, beaten
- 3 green onions, thinly sliced
Instructions
- In a pot, bring the broth to a simmer over medium heat.
- Add the mushrooms, tofu, and bamboo shoots to the pot. Cook for 5 minutes.
- Stir in the soy sauce, rice vinegar, cornstarch mixture, sesame oil, white pepper, ground ginger, and chili flakes. Simmer for another 5 minutes.
- Slowly pour the beaten eggs into the soup while stirring gently to create egg ribbons.
- Remove the pot from the heat and stir in the green onions.
- Adjust the seasoning to taste with more soy sauce, vinegar, or white pepper if desired.
