Ingredients

  • 1 kg mixed meat (chicken, lamb, and/or beef)
  • 1 kg mixed vegetables (potatoes, bell peppers, onions, tomatoes)
  • 4 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 tbsp dried herbs (rosemary, thyme, oregano)
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 200°C (400°F).
  2. Cut the meat and vegetables into large chunks and place them in a large baking dish.
  3. Drizzle olive oil over the meat and vegetables, then add minced garlic, dried herbs, salt, and pepper. Toss to coat evenly.
  4. Cover the baking dish with a lid or aluminum foil and place it in the preheated oven.
  5. Cook for 2 hours, then remove the lid and cook for an additional 20 minutes to allow the meat and vegetables to brown slightly.
  6. Once done, remove from the oven and let it rest for a few minutes before serving.
