Ingredients

  • 4 fish fillets (such as sea bass or sea bream)
  • 4 large potatoes, sliced
  • 2 onions, sliced
  • 4 garlic cloves, minced
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 cup cherry tomatoes
  • 1/4 cup extra virgin olive oil
  • 1/4 cup white wine
  • 2 tbsp fresh parsley, chopped
  • Salt and pepper to taste

Instructions

  1. Preheat the stovetop to medium heat.
  2. Place a large, deep skillet or a traditional peka dish on the stovetop.
  3. Layer the sliced potatoes, onions, garlic, and bell peppers in the skillet.
  4. Season the fish fillets with salt and pepper, then place them on top of the vegetable mixture.
  5. Add the cherry tomatoes around the fish.
  6. Drizzle the olive oil and white wine over the fish and vegetables.
