Ingredients
- 4 fish fillets (such as sea bass or sea bream)
- 4 large potatoes, sliced
- 2 onions, sliced
- 4 garlic cloves, minced
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 cup cherry tomatoes
- 1/4 cup extra virgin olive oil
- 1/4 cup white wine
- 2 tbsp fresh parsley, chopped
- Salt and pepper to taste
Instructions
- Preheat the stovetop to medium heat.
- Place a large, deep skillet or a traditional peka dish on the stovetop.
- Layer the sliced potatoes, onions, garlic, and bell peppers in the skillet.
- Season the fish fillets with salt and pepper, then place them on top of the vegetable mixture.
- Add the cherry tomatoes around the fish.
- Drizzle the olive oil and white wine over the fish and vegetables.
