Ingredients

  • 1.5 lbs lamb or beef, cubed
  • 4 potatoes, sliced
  • 2 bell peppers, sliced
  • 1 onion, sliced
  • 4 garlic cloves, minced
  • 2 tomatoes, chopped
  • 1/4 cup olive oil
  • 1 tsp dried rosemary
  • 1 tsp dried thyme
  • Salt and pepper to taste

Instructions

  1. Preheat the stovetop to medium heat.
  2. In a large pot, layer the ingredients starting with the meat at the bottom, followed by potatoes, bell peppers, onion, garlic, and tomatoes.
  3. Drizzle olive oil over the layers and sprinkle with dried rosemary, thyme, salt, and pepper.
  4. Cover the pot with a lid and let it cook for 2 hours, stirring occasionally.
  5. Once the meat is tender and the vegetables are cooked, remove from heat and let it rest for 10 minutes before serving.
