Ingredients
- 1.5 lbs lamb or beef, cubed
- 4 potatoes, sliced
- 2 bell peppers, sliced
- 1 onion, sliced
- 4 garlic cloves, minced
- 2 tomatoes, chopped
- 1/4 cup olive oil
- 1 tsp dried rosemary
- 1 tsp dried thyme
- Salt and pepper to taste
Instructions
- Preheat the stovetop to medium heat.
- In a large pot, layer the ingredients starting with the meat at the bottom, followed by potatoes, bell peppers, onion, garlic, and tomatoes.
- Drizzle olive oil over the layers and sprinkle with dried rosemary, thyme, salt, and pepper.
- Cover the pot with a lid and let it cook for 2 hours, stirring occasionally.
- Once the meat is tender and the vegetables are cooked, remove from heat and let it rest for 10 minutes before serving.
