Ingredients
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 cup mushrooms, sliced
- 1 cup sauerkraut
- 6 cups vegetable broth
- 2 potatoes, diced
- 1 bay leaf

- 2 tablespoons olive oil
Instructions
- In a large pot, heat the olive oil over medium heat.
- Add the chopped onion and minced garlic, and sauté until the onion is translucent.
- Add the sliced mushrooms and sauté until they are golden brown.
- Stir in the sauerkraut and cook for 5 minutes.
- Pour in the vegetable broth and add the diced potatoes and bay leaf.
- Season with salt and pepper, then bring the soup to a boil.
- Reduce the heat, cover the pot, and simmer for 45 minutes.
- Remove the bay leaf before serving.
