Ingredients

  • 6 cups vegetable broth
  • 2 potatoes, diced
  • 1 bay leaf
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the chopped onion and minced garlic, and sauté until the onion is translucent.
  3. Add the sliced mushrooms and sauté until they are golden brown.
  4. Stir in the sauerkraut and cook for 5 minutes.

  6. Season with salt and pepper, then bring the soup to a boil.
  7. Reduce the heat, cover the pot, and simmer for 45 minutes.
  8. Remove the bay leaf before serving.
