Ingredients

  • 4 cups vegetable broth

  • 1/2 cup sliced bamboo shoots
  • 1/4 cup rice vinegar
  • 2 tablespoons soy sauce
  • 1 tablespoon chili paste
  • 1 teaspoon grated ginger
  • 1/2 teaspoon sugar
  • Salt and pepper to taste
  • 2 green onions, thinly sliced
  • 1/4 cup chopped cilantro

Instructions

  1. In a large pot, bring the vegetable broth to a boil.
  2. Add the shiitake mushrooms, carrots, cabbage, and bamboo shoots to the pot. Reduce the heat and let the vegetables simmer for 10 minutes.
