Ingredients

  • 1 stalk lemongrass, smashed and cut into 2-inch pieces
  • 3 kaffir lime leaves
  • 2 cups chicken broth
  • 1 cup coconut milk
  • 1 tablespoon fish sauce
  • 1 tablespoon tamarind paste
  • 1 teaspoon sugar
  • 8 ounces shrimp, peeled and deveined
  • 8 ounces squid, cleaned and sliced into rings
  • 1 tomato, cut into wedges
  • 1 small onion, sliced
  • 2 red chilies, sliced
  • 1/4 cup cilantro leaves
  • 1/4 cup green onions, chopped
  • Salt to taste

Instructions

  1. In a pot, bring the chicken broth to a boil. Add lemongrass and kaffir lime leaves, and simmer for 5 minutes.
  2. Stir in the coconut milk, fish sauce, tamarind paste, and sugar. Bring to a gentle boil.
  3. Add the shrimp, squid, tomato, and onion. Cook for 2-3 minutes until the seafood is cooked through.
  4. Stir in the red chilies, cilantro, and green onions. Season with salt to taste.
  5. Serve the Htamin Jin hot, garnished with extra cilantro and lime wedges if desired.
