Htamin Jin (spicy Shan Pork Noodles)

Ingredients

  • 1 lb pork belly, thinly sliced
  • 8 oz rice noodles
  • 2 tbsp vegetable oil
  • 3 cloves garlic, minced
  • 1 onion, thinly sliced
  • 2-3 red chilies, sliced
  • 2 tbsp soy sauce
  • 1 tbsp fish sauce
  • 1 tsp sugar
  • 1/2 cup chicken broth
  • 1/4 cup chopped cilantro
  • Lime wedges for serving

Instructions

  1. Soak the rice noodles in hot water for 10-15 minutes until softened. Drain and set aside.
  2. Heat the vegetable oil in a large pan over medium heat. Add the garlic, onion, and red chilies. Cook until fragrant.
  3. Add the pork slices and cook until browned.
  4. Stir in the soy sauce, fish sauce, and sugar. Pour in the chicken broth and let it simmer for 5 minutes.
  5. Add the soaked rice noodles to the pan and toss to combine with the pork and sauce.
  6. Remove from heat and garnish with chopped cilantro. Serve with lime wedges.
