Htamin Jin is a popular Burmese Chinese dish that features spicy Shan-style chicken noodles. This flavorful and aromatic dish is a perfect combination of tender chicken, savory noodles, and a spicy kick from the traditional Shan-style seasoning.
Ingredients
- 1 lb boneless, skinless chicken thighs, thinly sliced
- 8 oz rice noodles
- 2 tbsp vegetable oil
- 3 cloves garlic, minced
- 1 shallot, finely chopped
- 1 tsp turmeric powder
- 1 tsp paprika
- 1 tsp chili powder
- 1/2 tsp fish sauce
- 1/4 cup chicken broth
- Salt to taste
- Fresh cilantro, chopped (for garnish)
Instructions
- In a large pot, cook the rice noodles according to the package instructions. Drain and set aside.
- Heat the vegetable oil in a large skillet over medium heat. Add the garlic and shallot, and sauté until fragrant.
- Add the sliced chicken to the skillet and cook until it's no longer pink.
- Sprinkle the turmeric powder, paprika, and chili powder over the chicken. Stir to coat the chicken evenly with the spices.
- Pour in the chicken broth and fish sauce. Simmer for a few minutes until the chicken is cooked through and the sauce thickens slightly.
- Season with salt to taste.
- Divide the cooked rice noodles into serving bowls and top with the spicy Shan-style chicken.
- Garnish with chopped cilantro and serve hot.
