Htamin Jin (spicy Shan-style Chicken Noodles)

Ingredients

  • 1 lb boneless, skinless chicken thighs, thinly sliced
  • 8 oz rice noodles
  • 2 tbsp vegetable oil
  • 3 cloves garlic, minced
  • 1 shallot, finely chopped
  • 1 tsp turmeric powder
  • 1 tsp paprika
  • 1 tsp chili powder
  • 1/2 tsp fish sauce
  • 1/4 cup chicken broth
  • Salt to taste
  • Fresh cilantro, chopped (for garnish)

Instructions

  1. In a large pot, cook the rice noodles according to the package instructions. Drain and set aside.
  2. Heat the vegetable oil in a large skillet over medium heat. Add the garlic and shallot, and sauté until fragrant.
  3. Add the sliced chicken to the skillet and cook until it's no longer pink.
  4. Sprinkle the turmeric powder, paprika, and chili powder over the chicken. Stir to coat the chicken evenly with the spices.
  5. Pour in the chicken broth and fish sauce. Simmer for a few minutes until the chicken is cooked through and the sauce thickens slightly.
  6. Season with salt to taste.
  7. Divide the cooked rice noodles into serving bowls and top with the spicy Shan-style chicken.
  8. Garnish with chopped cilantro and serve hot.
