Htamin Jin Thoke (spicy Shan-style Noodle Salad)

Ingredients

  • 200g rice noodles
  • 1 cup shredded cabbage
  • 1/2 cup shredded carrots
  • 1/4 cup chopped cilantro
  • 1/4 cup chopped green onions
  • 2 tbsp roasted peanuts
  • 2 tbsp sesame seeds
  • 1/4 cup lime juice
  • 2 tbsp soy sauce
  • 1 tbsp fish sauce
  • 1 tbsp chili flakes
  • 1 clove garlic, minced

Instructions

  1. Boil the rice noodles according to package instructions. Drain and rinse with cold water, then set aside.
  2. In a large bowl, combine the shredded cabbage, carrots, cilantro, green onions, peanuts, and sesame seeds.
  3. In a small bowl, whisk together the lime juice, soy sauce, fish sauce, chili flakes, and minced garlic to make the dressing.
  4. Pour the dressing over the vegetable mixture and toss to combine.
  5. Add the cooked rice noodles to the bowl and gently toss to mix everything together.
  6. Chill the salad in the refrigerator for at least 30 minutes before serving.
