Htamin Jin Thoke, also known as Spicy Shan-style Noodle Salad, is a popular dish in Burmese Chinese Cuisine. This refreshing and flavorful salad is perfect for a light lunch or as a side dish.
Ingredients
- 200g rice noodles
- 1 cup shredded cabbage
- 1/2 cup shredded carrots
- 1/4 cup chopped cilantro
- 1/4 cup chopped green onions
- 2 tbsp roasted peanuts
- 2 tbsp sesame seeds
- 1/4 cup lime juice
- 2 tbsp soy sauce
- 1 tbsp fish sauce
- 1 tbsp chili flakes
- 1 clove garlic, minced
Instructions
- Boil the rice noodles according to package instructions. Drain and rinse with cold water, then set aside.
- In a large bowl, combine the shredded cabbage, carrots, cilantro, green onions, peanuts, and sesame seeds.
- In a small bowl, whisk together the lime juice, soy sauce, fish sauce, chili flakes, and minced garlic to make the dressing.
- Pour the dressing over the vegetable mixture and toss to combine.
- Add the cooked rice noodles to the bowl and gently toss to mix everything together.
- Chill the salad in the refrigerator for at least 30 minutes before serving.
