Hu Jiao Ji (black Pepper Chicken)

Ingredients

  • 500g boneless, skinless chicken thighs, cut into bite-sized pieces
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 tablespoon cornstarch
  • 1 teaspoon ground black pepper
  • 1/2 teaspoon sugar
  • 3 tablespoons oil, divided
  • 1 onion, sliced
  • 3 cloves garlic, minced
  • 1 bell pepper, sliced
  • 1 teaspoon freshly ground black pepper
  • 1/2 cup chicken broth
  • 2 green onions, chopped

Instructions

  1. In a bowl, mix the chicken with soy sauce, oyster sauce, cornstarch, ground black pepper, and sugar. Let it marinate for 10 minutes.
  2. Heat 2 tablespoons of oil in a wok or large skillet over high heat. Add the marinated chicken and stir-fry until cooked through. Remove the chicken from the wok and set aside.
  3. Heat the remaining tablespoon of oil in the same wok. Add the onion, garlic, and bell pepper. Stir-fry for 2-3 minutes.
  4. Return the cooked chicken to the wok. Add the freshly ground black pepper and chicken broth. Stir-fry for another 2-3 minutes.
  5. Garnish with chopped green onions and serve hot.
