Huang Hou Bao Ji (empress' Treasure Chicken)

Ingredients

  • 4 boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1/4 cup soy sauce
  • 2 tablespoons oyster sauce
  • 1 tablespoon cornstarch
  • 1 tablespoon sugar
  • 1/2 teaspoon ground white pepper
  • 2 tablespoons vegetable oil
  • 3 cloves garlic, minced
  • 1 red bell pepper, cut into chunks
  • 1 green bell pepper, cut into chunks
  • 1 cup snow peas
  • 1/2 cup cashews
  • 2 green onions, sliced

Instructions

  1. In a bowl, combine the soy sauce, oyster sauce, cornstarch, sugar, and white pepper. Add the chicken pieces and toss to coat. Let marinate for 15 minutes.
  2. Heat 1 tablespoon of oil in a wok or large skillet over high heat. Add the marinated chicken and stir-fry until cooked through. Remove from the wok and set aside.
  3. Heat the remaining 1 tablespoon of oil in the wok. Add the garlic, bell peppers, and snow peas. Stir-fry for 2-3 minutes until the vegetables are tender-crisp.
  4. Return the cooked chicken to the wok. Add the cashews and green onions. Stir-fry for another 1-2 minutes to heat everything through.
  5. Transfer to a serving dish and serve hot with steamed rice.
