Ingredients
- 1 lb jumbo shrimp, peeled and deveined
- 1 lb sea scallops
- 1 lb mixed seafood (such as squid, mussels, and clams)
- 2 tbsp vegetable oil
- 3 cloves garlic, minced
- 1 inch ginger, grated
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 cup snow peas
- 1/4 cup chicken broth
- 2 tbsp soy sauce
- 1 tbsp oyster sauce
- 1 tsp sugar
- 1/2 tsp sesame oil
- 2 green onions, chopped
- 2 tbsp cornstarch dissolved in 3 tbsp water
Instructions
- Heat the vegetable oil in a wok or large skillet over high heat. Add the garlic and ginger, and stir-fry for 30 seconds.
- Add the shrimp, scallops, and mixed seafood to the wok, and stir-fry for 2-3 minutes until they are almost cooked through. Remove the seafood from the wok and set aside.
- In the same wok, stir-fry the bell peppers and snow peas for 2-3 minutes until they are crisp-tender.
- Return the seafood to the wok, and add the chicken broth, soy sauce, oyster sauce, sugar, and sesame oil. Stir well to combine.
- Bring the sauce to a simmer, then add the cornstarch mixture and stir until the sauce thickens.
- Sprinkle the chopped green onions over the seafood, and stir to combine.
- Transfer the Huang Hou Huan Hai Xian to a serving platter and serve hot with steamed rice.
