Ingredients

  • 1 lb jumbo shrimp, peeled and deveined
  • 1 lb sea scallops
  • 1 lb mixed seafood (such as squid, mussels, and clams)
  • 2 tbsp vegetable oil
  • 3 cloves garlic, minced
  • 1 inch ginger, grated
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 cup snow peas
  • 1/4 cup chicken broth
  • 2 tbsp soy sauce
  • 1 tbsp oyster sauce
  • 1 tsp sugar
  • 1/2 tsp sesame oil
  • 2 green onions, chopped
  • 2 tbsp cornstarch dissolved in 3 tbsp water

Instructions

  1. Heat the vegetable oil in a wok or large skillet over high heat. Add the garlic and ginger, and stir-fry for 30 seconds.
  2. Add the shrimp, scallops, and mixed seafood to the wok, and stir-fry for 2-3 minutes until they are almost cooked through. Remove the seafood from the wok and set aside.
  3. In the same wok, stir-fry the bell peppers and snow peas for 2-3 minutes until they are crisp-tender.
  4. Return the seafood to the wok, and add the chicken broth, soy sauce, oyster sauce, sugar, and sesame oil. Stir well to combine.
  5. Bring the sauce to a simmer, then add the cornstarch mixture and stir until the sauce thickens.
  6. Sprinkle the chopped green onions over the seafood, and stir to combine.
  7. Transfer the Huang Hou Huan Hai Xian to a serving platter and serve hot with steamed rice.
