Ingredients

  • 1 whole chicken, cut into pieces
  • 3 slices of ginger
  • 3 cloves of garlic, minced
  • 2 green onions, chopped
  • 1 tablespoon soy sauce
  • 1 tablespoon dark soy sauce
  • 1 tablespoon Shaoxing wine
  • 1 tablespoon sugar
  • 2 cups chicken broth
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat some oil over medium heat. Add the ginger, garlic, and green onions, and sauté until fragrant.
  2. Add the chicken pieces to the pot and brown them on all sides.
  3. Pour in the soy sauce, dark soy sauce, and Shaoxing wine. Stir in the sugar and chicken broth. Season with salt and pepper.
  4. Cover the pot and simmer for 1 hour, or until the chicken is tender.
  5. Once the chicken is cooked, remove it from the pot and place it on a serving dish.
  6. Simmer the sauce until it thickens, then pour it over the chicken.
  7. Serve the Hubei-style braised chicken hot with steamed rice.
