湖北红烧鸭 (Hubei-style Braised Duck) is a traditional dish from Hubei Cuisine, known for its rich flavors and tender meat. This recipe combines the savory taste of duck with a sweet and aromatic braising sauce, creating a mouthwatering dish that is perfect for special occasions or family gatherings.
Ingredients
- 1 whole duck, about 4 lbs, chopped into pieces
- 3 slices of ginger
- 3 green onions, cut into 2-inch pieces
- 3 cloves of garlic, minced
- 1 star anise
- 2 cinnamon sticks
- 1/4 cup soy sauce
- 1/4 cup dark soy sauce
- 1/4 cup Shaoxing wine
- 1/4 cup rock sugar
- 4 cups water
Instructions
- Heat a wok or large pot over medium heat. Add the duck pieces and cook until browned on all sides. Remove and set aside.
- In the same wok, add the ginger, green onions, and garlic. Stir-fry until fragrant.
- Add the star anise, cinnamon sticks, soy sauce, dark soy sauce, Shaoxing wine, and rock sugar. Stir until the sugar is dissolved.
- Return the duck pieces to the wok. Add water and bring to a boil.
- Reduce heat to low, cover, and simmer for 1.5 to 2 hours, or until the duck is tender.
- Uncover the wok and increase the heat to thicken the sauce.
- Serve the Hubei-style Braised Duck hot with steamed rice.
