Hubei-style Braised Duck (湖北红烧鸭)

Ingredients

  • 1 whole duck, about 4 lbs, chopped into pieces
  • 3 slices of ginger
  • 3 green onions, cut into 2-inch pieces
  • 3 cloves of garlic, minced
  • 1 star anise
  • 2 cinnamon sticks
  • 1/4 cup soy sauce
  • 1/4 cup dark soy sauce
  • 1/4 cup Shaoxing wine
  • 1/4 cup rock sugar
  • 4 cups water

Instructions

  1. Heat a wok or large pot over medium heat. Add the duck pieces and cook until browned on all sides. Remove and set aside.
  2. In the same wok, add the ginger, green onions, and garlic. Stir-fry until fragrant.
  3. Add the star anise, cinnamon sticks, soy sauce, dark soy sauce, Shaoxing wine, and rock sugar. Stir until the sugar is dissolved.
  4. Return the duck pieces to the wok. Add water and bring to a boil.
  5. Reduce heat to low, cover, and simmer for 1.5 to 2 hours, or until the duck is tender.
  6. Uncover the wok and increase the heat to thicken the sauce.
  7. Serve the Hubei-style Braised Duck hot with steamed rice.
