Ingredients

  • 1.5 lbs lamb, cut into chunks
  • 3 tbsp soy sauce
  • 2 tbsp dark soy sauce
  • 1 tbsp Shaoxing wine
  • 1 tbsp sugar
  • 3 slices ginger
  • 3 cloves garlic, minced
  • 2 star anise
  • 2 dried red chilies
  • 2 green onions, cut into 2-inch pieces
  • 1 cup chicken broth
  • 2 tbsp vegetable oil
  • Salt and pepper to taste

Instructions

  1. Marinate the lamb with soy sauce, dark soy sauce, and Shaoxing wine for 15 minutes.
  2. Heat vegetable oil in a pot over medium heat. Add ginger, garlic, star anise, and dried red chilies. Stir-fry until fragrant.
  3. Add the marinated lamb and sugar. Cook until the lamb is browned.
  4. Pour in the chicken broth and bring to a boil. Then reduce heat to low, cover, and simmer for 1.5 hours, or until the lamb is tender.
  5. Add green onions and cook for another 5 minutes.
  6. Season with salt and pepper to taste.
