Ingredients
- 1.5 lbs lamb, cut into chunks
- 3 tbsp soy sauce
- 2 tbsp dark soy sauce
- 1 tbsp Shaoxing wine
- 1 tbsp sugar
- 3 slices ginger
- 3 cloves garlic, minced
- 2 star anise
- 2 dried red chilies
- 2 green onions, cut into 2-inch pieces
- 1 cup chicken broth
- 2 tbsp vegetable oil
- Salt and pepper to taste
Instructions
- Marinate the lamb with soy sauce, dark soy sauce, and Shaoxing wine for 15 minutes.
- Heat vegetable oil in a pot over medium heat. Add ginger, garlic, star anise, and dried red chilies. Stir-fry until fragrant.
- Add the marinated lamb and sugar. Cook until the lamb is browned.
- Pour in the chicken broth and bring to a boil. Then reduce heat to low, cover, and simmer for 1.5 hours, or until the lamb is tender.
- Add green onions and cook for another 5 minutes.
- Season with salt and pepper to taste.
