Hubei-style Hot Pot (湖北火锅)
湖北火锅 (Hubei-style Hot Pot) is a traditional dish from the Hubei province in China, known for its spicy and flavorful broth. This hot pot is perfect for gatherings and cold weather, as it warms both the body and the soul.
Ingredients
- 500g thinly sliced beef
- 300g firm tofu, cubed
- 200g enoki mushrooms
- 150g Chinese cabbage, chopped
- 100g mung bean sprouts
- 100g glass noodles
- 4 cups beef or chicken broth
- 4 cloves garlic, minced
- 3 green onions, chopped
- 2 tbsp Sichuan peppercorns
- 2 tbsp chili bean paste
- 2 tbsp soy sauce
- 1 tbsp vegetable oil
- 1 tbsp Chinese cooking wine
- 1 tsp sugar
Instructions
- In a large pot, heat the vegetable oil over medium heat. Add the garlic, green onions, Sichuan peppercorns, and chili bean paste. Stir-fry for 2 minutes.
- Pour in the beef or chicken broth and bring to a boil. Add the soy sauce, Chinese cooking wine, and sugar. Simmer for 30 minutes.
- Add the beef, tofu, mushrooms, Chinese cabbage, and mung bean sprouts to the pot. Cook for 5 minutes.
- Add the glass noodles and cook for an additional 3 minutes.
- Serve the hot pot in a communal pot at the table, and let everyone cook their own ingredients in the broth.
