Ingredients

  • 500g thinly sliced beef
  • 300g firm tofu, cubed
  • 200g enoki mushrooms
  • 150g Chinese cabbage, chopped
  • 100g mung bean sprouts
  • 100g glass noodles
  • 4 cups beef or chicken broth
  • 4 cloves garlic, minced
  • 3 green onions, chopped
  • 2 tbsp Sichuan peppercorns
  • 2 tbsp chili bean paste
  • 2 tbsp soy sauce
  • 1 tbsp vegetable oil
  • 1 tbsp Chinese cooking wine
  • 1 tsp sugar

Instructions

  1. In a large pot, heat the vegetable oil over medium heat. Add the garlic, green onions, Sichuan peppercorns, and chili bean paste. Stir-fry for 2 minutes.
  2. Pour in the beef or chicken broth and bring to a boil. Add the soy sauce, Chinese cooking wine, and sugar. Simmer for 30 minutes.
  3. Add the beef, tofu, mushrooms, Chinese cabbage, and mung bean sprouts to the pot. Cook for 5 minutes.
  4. Add the glass noodles and cook for an additional 3 minutes.
  5. Serve the hot pot in a communal pot at the table, and let everyone cook their own ingredients in the broth.
