Hubei-style Smoked Duck (湖北熏鸭)
湖北熏鸭 (Hubei-style Smoked Duck) is a traditional dish from Hubei Cuisine known for its rich flavor and tender meat. This recipe combines the unique smoking technique with a blend of aromatic spices to create a mouthwatering dish that is perfect for special occasions or family gatherings.
Ingredients
- 1 whole duck, cleaned and giblets removed
- 1/4 cup soy sauce
- 1/4 cup Shaoxing wine
- 2 tbsp brown sugar
- 1 tbsp Sichuan peppercorns
- 4 star anise
- 3 dried red chilies
- 4 slices ginger
- 4 green onions, cut into 2-inch pieces
- 1/4 cup rice
- 1/4 cup black tea leaves
- 1/4 cup brown sugar
Instructions
- Rinse the duck under cold water and pat dry with paper towels.
- In a small bowl, mix together soy sauce, Shaoxing wine, and brown sugar. Rub the mixture all over the duck, inside and out.
- In a large wok or pot, dry roast the Sichuan peppercorns, star anise, dried red chilies, ginger, and green onions until fragrant.
- Place a rack in the wok or pot and put the duck on top. Cover and smoke over low heat for 1 hour.
- In a separate wok, mix together rice, black tea leaves, and brown sugar. Place a small rack in the wok and put the wok with the duck on top. Cover and smoke for an additional 1 hour.
- Remove the duck from the wok, let it cool, then slice and serve.
