Hubei-style Smoked Duck (湖北熏鸭)

Ingredients

  • 1 whole duck, cleaned and giblets removed
  • 1/4 cup soy sauce
  • 1/4 cup Shaoxing wine
  • 2 tbsp brown sugar
  • 1 tbsp Sichuan peppercorns
  • 4 star anise
  • 3 dried red chilies
  • 4 slices ginger
  • 4 green onions, cut into 2-inch pieces
  • 1/4 cup rice
  • 1/4 cup black tea leaves
  • 1/4 cup brown sugar

Instructions

  1. Rinse the duck under cold water and pat dry with paper towels.
  2. In a small bowl, mix together soy sauce, Shaoxing wine, and brown sugar. Rub the mixture all over the duck, inside and out.
  3. In a large wok or pot, dry roast the Sichuan peppercorns, star anise, dried red chilies, ginger, and green onions until fragrant.
  4. Place a rack in the wok or pot and put the duck on top. Cover and smoke over low heat for 1 hour.
  5. In a separate wok, mix together rice, black tea leaves, and brown sugar. Place a small rack in the wok and put the wok with the duck on top. Cover and smoke for an additional 1 hour.
  6. Remove the duck from the wok, let it cool, then slice and serve.
