Hula Huli Shrimp Skewers

Ingredients

  • 1 pound large shrimp, peeled and deveined
  • 1/2 cup soy sauce
  • 1/4 cup brown sugar
  • 1/4 cup ketchup
  • 1/4 cup pineapple juice
  • 2 cloves garlic, minced
  • 1 teaspoon grated ginger
  • 1/4 teaspoon black pepper
  • 1 red bell pepper, cut into chunks
  • 1 green bell pepper, cut into chunks
  • 1 red onion, cut into chunks
  • Wooden skewers, soaked in water for 30 minutes

Instructions

  1. In a bowl, whisk together soy sauce, brown sugar, ketchup, pineapple juice, garlic, ginger, and black pepper to make the marinade.
  2. Place the shrimp in a resealable plastic bag and pour 1/2 cup of the marinade over the shrimp. Seal the bag and marinate in the refrigerator for 30 minutes.
  3. Preheat the grill to medium-high heat.
  4. Thread the marinated shrimp, bell peppers, and onion onto the soaked skewers.
  5. Grill the skewers for 2-3 minutes per side, basting with the reserved marinade, until the shrimp are pink and opaque.
