Huli Huli Beef Stir-fry

Ingredients

  • 1 lb flank steak, thinly sliced
  • 2 cups mixed vegetables (bell peppers, snap peas, carrots, broccoli)
  • 1/4 cup soy sauce
  • 2 tbsp brown sugar
  • 2 cloves garlic, minced
  • 1 tsp grated ginger
  • 2 tbsp vegetable oil
  • Salt and pepper to taste

Instructions

  1. In a small bowl, whisk together soy sauce, brown sugar, garlic, and ginger to make the sauce.
  2. Season the sliced beef with salt and pepper.
  3. Heat 1 tablespoon of vegetable oil in a large skillet or wok over high heat.
  4. Add the beef to the skillet and cook for 2-3 minutes until browned. Remove the beef from the skillet and set aside.
  5. Heat the remaining tablespoon of oil in the skillet and add the mixed vegetables. Stir-fry for 3-4 minutes until they are tender-crisp.
  6. Return the beef to the skillet and pour the sauce over the beef and vegetables. Stir-fry for an additional 1-2 minutes until everything is heated through and well coated with the sauce.
  7. Serve the Huli Huli Beef Stir-Fry hot over steamed rice or noodles.
