Huli Huli Chicken Skewers

Ingredients

  • 4 boneless, skinless chicken breasts, cut into 1-inch cubes
  • 1 cup soy sauce
  • 1/2 cup brown sugar
  • 1/4 cup ketchup
  • 1/4 cup pineapple juice
  • 1/4 cup rice vinegar
  • 2 cloves garlic, minced
  • 1 tablespoon grated ginger
  • 1 teaspoon sesame oil
  • 1/4 teaspoon black pepper
  • Wooden skewers, soaked in water for 30 minutes

Instructions

  1. In a bowl, whisk together soy sauce, brown sugar, ketchup, pineapple juice, rice vinegar, garlic, ginger, sesame oil, and black pepper to make the marinade.
  2. Place the chicken cubes in a resealable plastic bag and pour in the marinade. Seal the bag and refrigerate for at least 2 hours, or overnight for best results.
  3. Preheat the grill to medium-high heat.
  4. Thread the marinated chicken cubes onto the soaked skewers.
