Huli Huli Tofu Skewers

Ingredients

  • 1 block extra firm tofu, pressed and cut into cubes
  • 1 cup pineapple juice
  • 1/4 cup soy sauce
  • 2 tablespoons brown sugar
  • 1 tablespoon ketchup
  • 1 teaspoon sesame oil
  • 1 teaspoon minced ginger
  • 1 teaspoon minced garlic
  • 1 red bell pepper, cut into chunks
  • 1 red onion, cut into chunks
  • Wooden skewers, soaked in water

Instructions

  1. In a bowl, whisk together pineapple juice, soy sauce, brown sugar, ketchup, sesame oil, ginger, and garlic to make the marinade.
  2. Place the tofu cubes in a shallow dish and pour half of the marinade over the tofu. Let it marinate for at least 15 minutes.
  3. Thread the marinated tofu, bell pepper, and onion onto the soaked skewers.
  4. Preheat the grill to medium-high heat and lightly oil the grate.
  5. Grill the skewers, turning and basting with the remaining marinade, until the tofu is lightly charred and the vegetables are tender, about 10 minutes.
  6. Serve the Huli Huli Tofu Skewers with any remaining pineapple glaze on the side.
