Huli Huli Tofu Skewers
Huli Huli Tofu Skewers are a delicious Hawaiian-inspired dish that brings together the flavors of sweet and savory. These skewers are perfect for a summer barbecue or a weeknight dinner. Marinated tofu is grilled to perfection and served with a tangy pineapple glaze.
Ingredients
- 1 block extra firm tofu, pressed and cut into cubes
- 1 cup pineapple juice
- 1/4 cup soy sauce
- 2 tablespoons brown sugar
- 1 tablespoon ketchup
- 1 teaspoon sesame oil
- 1 teaspoon minced ginger
- 1 teaspoon minced garlic
- 1 red bell pepper, cut into chunks
- 1 red onion, cut into chunks
- Wooden skewers, soaked in water
Instructions
- In a bowl, whisk together pineapple juice, soy sauce, brown sugar, ketchup, sesame oil, ginger, and garlic to make the marinade.
- Place the tofu cubes in a shallow dish and pour half of the marinade over the tofu. Let it marinate for at least 15 minutes.
- Thread the marinated tofu, bell pepper, and onion onto the soaked skewers.
- Preheat the grill to medium-high heat and lightly oil the grate.
- Grill the skewers, turning and basting with the remaining marinade, until the tofu is lightly charred and the vegetables are tender, about 10 minutes.
- Serve the Huli Huli Tofu Skewers with any remaining pineapple glaze on the side.
