Humintas (bolivian Corn And Cheese Fritters)
Humintas are delicious Bolivian corn and cheese fritters that are perfect for breakfast or as a snack. They are made with fresh corn, cheese, and a few other simple ingredients, and are then wrapped in corn husks and steamed to perfection.
Ingredients
- 6 ears of fresh corn, kernels removed
- 1 cup grated cheese (queso fresco or mozzarella)
- 1/2 cup cornmeal
- 1/4 cup sugar
- 1/4 cup butter, melted
- 1/2 teaspoon salt
- 8-10 corn husks, soaked in water
Instructions
- In a large bowl, mix the fresh corn kernels, grated cheese, cornmeal, sugar, melted butter, and salt until well combined.
- Take a soaked corn husk and place a spoonful of the corn mixture in the center. Fold the husk to enclose the filling and tie it with a strip of husk to secure.
- Place the humintas in a large pot with a steamer basket and enough water to reach the bottom of the basket. Steam for 40 minutes.
- Remove the humintas from the steamer and let them cool for a few minutes before serving.
