Ingredients
- 1 1/2 lbs chicken, cut into pieces
- 1 onion, finely chopped
- 3 garlic cloves, minced
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1/2 tsp ground turmeric
- 1/4 tsp ground cinnamon
- 1/4 tsp cayenne pepper
- 1 can (15 oz) chickpeas, drained and rinsed
- 1 can (14.5 oz) diced tomatoes
- 2 cups chicken broth
- Salt and pepper to taste
- 2 tbsp olive oil
- Fresh cilantro for garnish
Instructions
- In a large pot, heat the olive oil over medium heat. Add the chicken pieces and cook until browned on all sides. Remove the chicken from the pot and set aside.
- In the same pot, add the chopped onion and cook until softened. Add the minced garlic, ground cumin, coriander, turmeric, cinnamon, and cayenne pepper. Cook for 1-2 minutes until fragrant.
- Stir in the diced tomatoes, chickpeas, and chicken broth. Return the browned chicken to the pot. Season with salt and pepper.
- Bring the stew to a boil, then reduce the heat to low. Cover and simmer for 45-50 minutes, or until the chicken is cooked through and tender.
- Adjust the seasoning if needed. Serve the Sudanese Spiced Chicken and Chickpea Stew hot, garnished with fresh cilantro.
