Ingredients

  • 1 1/2 lbs chicken, cut into pieces
  • 1 onion, finely chopped
  • 3 garlic cloves, minced
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1/2 tsp ground turmeric
  • 1/4 tsp ground cinnamon
  • 1/4 tsp cayenne pepper
  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1 can (14.5 oz) diced tomatoes
  • 2 cups chicken broth
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • Fresh cilantro for garnish

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the chicken pieces and cook until browned on all sides. Remove the chicken from the pot and set aside.
  2. In the same pot, add the chopped onion and cook until softened. Add the minced garlic, ground cumin, coriander, turmeric, cinnamon, and cayenne pepper. Cook for 1-2 minutes until fragrant.
  3. Stir in the diced tomatoes, chickpeas, and chicken broth. Return the browned chicken to the pot. Season with salt and pepper.
  4. Bring the stew to a boil, then reduce the heat to low. Cover and simmer for 45-50 minutes, or until the chicken is cooked through and tender.
