Ingredients

  • 1 lb boneless, skinless chicken breast, cut into small cubes
  • 2 tbsp fermented black beans, rinsed and minced
  • 2-3 fresh red chili peppers, thinly sliced
  • 3 cloves garlic, minced
  • 1 small onion, diced
  • 1 bell pepper, diced
  • 2 tbsp soy sauce
  • 1 tbsp oyster sauce
  • 1 tsp sugar
  • 1/2 cup chicken broth
  • 2 tbsp vegetable oil
  • Salt and pepper to taste

Instructions

  1. Heat vegetable oil in a wok or large skillet over high heat.
  2. Add the minced garlic, fermented black beans, and sliced chili peppers. Stir-fry for 30 seconds until fragrant.
  3. Add the diced onion and bell pepper, and stir-fry for another 2-3 minutes until slightly softened.
  4. Add the chicken cubes to the wok and stir-fry until they are no longer pink.
  5. Pour in the soy sauce, oyster sauce, sugar, and chicken broth. Stir well to combine.
  6. Simmer for 3-4 minutes until the chicken is cooked through and the sauce has thickened.
  7. Season with salt and pepper to taste.
  8. Transfer the 豉椒鸡丁 to a serving plate and serve hot with steamed rice.
