Ingredients
- 1 lb boneless, skinless chicken breast, cut into small cubes
- 2 tbsp fermented black beans, rinsed and minced
- 2-3 fresh red chili peppers, thinly sliced
- 3 cloves garlic, minced
- 1 small onion, diced
- 1 bell pepper, diced
- 2 tbsp soy sauce
- 1 tbsp oyster sauce
- 1 tsp sugar
- 1/2 cup chicken broth
- 2 tbsp vegetable oil
- Salt and pepper to taste
Instructions
- Heat vegetable oil in a wok or large skillet over high heat.
- Add the minced garlic, fermented black beans, and sliced chili peppers. Stir-fry for 30 seconds until fragrant.
- Add the diced onion and bell pepper, and stir-fry for another 2-3 minutes until slightly softened.
- Add the chicken cubes to the wok and stir-fry until they are no longer pink.
- Pour in the soy sauce, oyster sauce, sugar, and chicken broth. Stir well to combine.
- Simmer for 3-4 minutes until the chicken is cooked through and the sauce has thickened.
- Season with salt and pepper to taste.
- Transfer the 豉椒鸡丁 to a serving plate and serve hot with steamed rice.
