Ingredients

  • 4 chicken thighs, bone-in and skin-on
  • 3 tablespoons soy sauce
  • 2 tablespoons Shaoxing wine
  • 1 tablespoon sugar
  • 1 tablespoon dark soy sauce
  • 1 teaspoon Sichuan peppercorns
  • 3 slices ginger
  • 3 cloves garlic, minced
  • 2 green onions, cut into 2-inch pieces
  • 2 cups chicken broth
  • 2 tablespoons vegetable oil

Instructions

  1. Heat vegetable oil in a wok or large skillet over medium heat.
  2. Add chicken thighs, skin side down, and cook until golden brown, about 5 minutes per side. Remove and set aside.
  3. In the same wok, add ginger, garlic, and Sichuan peppercorns. Stir-fry until fragrant.
  4. Pour in soy sauce, dark soy sauce, Shaoxing wine, and sugar. Stir to combine.
  5. Return the chicken to the wok. Add green onions and chicken broth. Bring to a boil, then reduce heat to low and simmer for 30-35 minutes, or until the chicken is tender and the sauce has thickened.
  6. Transfer the braised chicken to a serving platter, garnish with additional green onions if desired, and serve hot.
