Ingredients
- 1 whole duck, about 4-5 lbs, chopped into pieces
- 3 slices ginger
- 3 green onions, cut into 2-inch pieces
- 1 cinnamon stick
- 2 star anise
- 1/4 cup soy sauce
- 1/4 cup dark soy sauce
- 1/4 cup Shaoxing wine
- 3 tbsp sugar
- 2 cups chicken broth
- 1 tbsp vegetable oil
- Salt to taste
Instructions
- In a large pot, heat the vegetable oil over medium heat. Add the ginger, green onions, cinnamon stick, and star anise. Stir-fry for 1-2 minutes until fragrant.
- Add the duck pieces to the pot and brown them on all sides, about 5-7 minutes.
- Pour in the soy sauce, dark soy sauce, Shaoxing wine, and sugar. Stir to coat the duck pieces evenly.
- Pour in the chicken broth and bring the mixture to a boil. Reduce the heat to low, cover the pot, and simmer for 1.5-2 hours until the duck is tender.
- Once the duck is tender, uncover the pot and cook for an additional 15-20 minutes to allow the sauce to thicken.
- Season with salt to taste and serve the braised duck hot with steamed rice.
