Ingredients

  • 1.5 kg spare ribs, cut into individual pieces
  • 3 tbsp soy sauce
  • 2 tbsp dark soy sauce
  • 3 tbsp Shaoxing wine
  • 2 tbsp sugar
  • 1 tbsp ginger, minced
  • 4 cloves garlic, minced
  • 2 cups water
  • 2 green onions, chopped
  • 1 tbsp vegetable oil

Instructions

  1. In a large pot, heat the vegetable oil over medium heat. Add the ginger and garlic, and stir-fry for 1-2 minutes until fragrant.
  2. Add the spare ribs to the pot and brown them on all sides, about 5 minutes.
  3. Pour in the soy sauce, dark soy sauce, and Shaoxing wine. Stir to coat the spare ribs evenly.
  4. Sprinkle the sugar over the spare ribs, then pour in the water.
  5. Bring the liquid to a boil, then reduce the heat to low. Cover and simmer for 1 hour, or until the spare ribs are tender.
  6. Garnish with chopped green onions before serving.
