Ingredients

  • 1 whole duck, about 5 lbs
  • 2 tbsp soy sauce
  • 2 tbsp Shaoxing wine
  • 1 tbsp sugar
  • 1 tsp five-spice powder
  • 1 tsp salt
  • 1/2 tsp Sichuan peppercorns
  • 2-inch piece of ginger, sliced
  • 4 green onions, cut into 2-inch pieces
  • 4 cups vegetable oil, for frying

Instructions

  1. Prick the duck skin all over with a fork, being careful not to pierce the meat.
  2. In a small bowl, mix together the soy sauce, Shaoxing wine, sugar, five-spice powder, salt, and Sichuan peppercorns to make a marinade.
  3. Rub the marinade all over the duck, inside and out. Stuff the cavity with ginger and green onions. Let the duck marinate for at least 2 hours, or overnight for best results.
  4. Heat the vegetable oil in a large wok or pot over medium heat. Carefully lower the duck into the hot oil and fry for 15 minutes, turning occasionally, until the skin is golden brown and crispy.
  5. Remove the duck from the oil and let it rest for 10 minutes before carving and serving.
