Ingredients

  • 1 lb beef, thinly sliced
  • 4 cups beef broth
  • 2 tbsp soy sauce
  • 2 tbsp chili paste
  • 1 tbsp Sichuan peppercorns
  • 4 cloves garlic, minced
  • 1 inch ginger, sliced
  • 2 green onions, chopped
  • 1/2 cup bamboo shoots
  • 1/4 cup black fungus (wood ear mushrooms)
  • 1 tsp sugar
  • Salt to taste

Instructions

  1. In a pot, bring the beef broth to a boil.
  2. Add the beef slices and cook for 2-3 minutes until they are no longer pink. Remove the beef and set aside.
  3. In the same pot, heat some oil and sauté the garlic, ginger, and green onions until fragrant.
  4. Add the chili paste, Sichuan peppercorns, soy sauce, and sugar. Stir to combine.
  5. Pour in the beef broth and bring the soup to a simmer. Cook for 1.5 hours.
  6. Add the bamboo shoots and black fungus, and continue to simmer for another 20 minutes.
  7. Season with salt to taste.
  8. Return the cooked beef to the pot and heat through.
  9. Serve the spicy beef soup hot, garnished with extra green onions if desired.
