Ingredients
- 1 lb beef, thinly sliced
- 4 cups beef broth
- 2 tbsp soy sauce
- 2 tbsp chili paste
- 1 tbsp Sichuan peppercorns
- 4 cloves garlic, minced
- 1 inch ginger, sliced
- 2 green onions, chopped
- 1/2 cup bamboo shoots
- 1/4 cup black fungus (wood ear mushrooms)
- 1 tsp sugar
- Salt to taste
Instructions
- In a pot, bring the beef broth to a boil.
- Add the beef slices and cook for 2-3 minutes until they are no longer pink. Remove the beef and set aside.
- In the same pot, heat some oil and sauté the garlic, ginger, and green onions until fragrant.
- Add the chili paste, Sichuan peppercorns, soy sauce, and sugar. Stir to combine.
- Pour in the beef broth and bring the soup to a simmer. Cook for 1.5 hours.
- Add the bamboo shoots and black fungus, and continue to simmer for another 20 minutes.
- Season with salt to taste.
- Return the cooked beef to the pot and heat through.
- Serve the spicy beef soup hot, garnished with extra green onions if desired.
