Hunan-style Spicy Frog Legs (辣子蛙腿)

Ingredients

  • 12 frog legs
  • 1/2 cup cornstarch
  • 1/4 cup vegetable oil
  • 1/4 cup dried red chilies
  • 3 cloves garlic, minced
  • 2 green onions, chopped
  • 1 tablespoon Shaoxing wine
  • 1 tablespoon soy sauce
  • 1 teaspoon sugar
  • 1/2 teaspoon Sichuan peppercorns
  • 1/2 teaspoon salt

Instructions

  1. Pat the frog legs dry with paper towels and coat them with cornstarch.
  2. Heat the vegetable oil in a wok over high heat and fry the frog legs until golden brown. Remove and set aside.
  3. In the same wok, add the dried red chilies, garlic, and Sichuan peppercorns. Stir-fry until fragrant.
  4. Return the frog legs to the wok, then add the Shaoxing wine, soy sauce, sugar, and salt. Stir-fry until the frog legs are coated in the spicy sauce.
  5. Garnish with chopped green onions and serve hot.
