Ingredients

  • 1 pound fresh green beans, ends trimmed

  • 3 cloves garlic, minced

  • 2-3 red chilies, sliced
  • 1 tablespoon Shaoxing wine (or dry sherry)
  • 1 tablespoon soy sauce
  • 1 teaspoon sugar
  • Salt to taste

Instructions

  1. Heat the vegetable oil in a wok or large skillet over high heat.
  2. Add the green beans and stir-fry for 4-5 minutes until they start to blister and turn brown in spots.
  3. Push the green beans to the side of the wok, add a bit more oil if needed, then add the garlic, ginger, and red chilies. Stir-fry for 30 seconds until fragrant.
  4. Add the Shaoxing wine, soy sauce, sugar, and salt. Stir-fry for another 1-2 minutes until the green beans are tender-crisp and coated in the sauce.
  5. Transfer to a serving plate and serve hot.
