Instructions

  1. Pat the fish fillets dry with paper towels and season with salt and pepper.
  2. Dredge the fish fillets in cornstarch, then dip in beaten eggs, shaking off any excess.
  3. Heat vegetable oil in a large skillet over medium-high heat. Fry the fish fillets until golden brown and cooked through. Transfer to a plate and set aside.
  4. In the same skillet, sauté the bell peppers, onion, and garlic until tender-crisp.
