Hungarian Mushroom Paprikash (Gombapaprikás)
Gombapaprikás, or Hungarian Mushroom Paprikash, is a classic vegetarian dish that is rich in flavor and perfect for a cozy dinner. This creamy mushroom stew is seasoned with sweet paprika and sour cream, creating a comforting and satisfying meal.
Ingredients
- 1 lb (450g) mushrooms, sliced
- 2 onions, finely chopped
- 2 tablespoons sweet Hungarian paprika
- 1 cup (240ml) vegetable broth
- 1 cup (240ml) sour cream
- Salt and pepper to taste
- 2 tablespoons vegetable oil
- 2 tablespoons all-purpose flour
Instructions
- In a large pot, heat the vegetable oil over medium heat. Add the onions and sauté until they are soft and translucent.
- Add the sliced mushrooms to the pot and cook until they release their liquid and become tender.
- Sprinkle the flour over the mushrooms and onions, stirring to coat evenly. Cook for a few minutes to remove the raw flour taste.
- Stir in the sweet paprika, then pour in the vegetable broth. Bring the mixture to a simmer and cook for 10-15 minutes, allowing the flavors to meld.
- Remove the pot from the heat and stir in the sour cream until well combined. Season with salt and pepper to taste.
- Serve the gombapaprikás hot, garnished with a dollop of sour cream and a sprinkle of fresh parsley, if desired.
