Gombapaprikás, or Hungarian Mushroom Paprikash, is a classic vegetarian dish that is rich in flavor and perfect for a cozy dinner. This creamy mushroom stew is seasoned with sweet paprika and sour cream, creating a comforting and satisfying meal.

Hungarian Mushroom Paprikash (Gombapaprikás)

Ingredients

  • 1 lb (450g) mushrooms, sliced
  • 2 onions, finely chopped
  • 2 tablespoons sweet Hungarian paprika
  • 1 cup (240ml) vegetable broth
  • 1 cup (240ml) sour cream
  • Salt and pepper to taste
  • 2 tablespoons vegetable oil
  • 2 tablespoons all-purpose flour

Instructions

  1. In a large pot, heat the vegetable oil over medium heat. Add the onions and sauté until they are soft and translucent.
  2. Add the sliced mushrooms to the pot and cook until they release their liquid and become tender.
  3. Sprinkle the flour over the mushrooms and onions, stirring to coat evenly. Cook for a few minutes to remove the raw flour taste.
  4. Stir in the sweet paprika, then pour in the vegetable broth. Bring the mixture to a simmer and cook for 10-15 minutes, allowing the flavors to meld.
  5. Remove the pot from the heat and stir in the sour cream until well combined. Season with salt and pepper to taste.
  6. Serve the gombapaprikás hot, garnished with a dollop of sour cream and a sprinkle of fresh parsley, if desired.
