Gombapaprikás Stroganoff, also known as Hungarian Mushroom Stroganoff, is a delicious and comforting dish that originates from Hungarian cuisine. This vegetarian version of the classic beef stroganoff is made with hearty mushrooms and a rich, creamy sauce, flavored with paprika and sour cream.
Ingredients
- 2 tablespoons olive oil
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 1 pound (450g) mushrooms, sliced
- 2 tablespoons Hungarian sweet paprika
- 1 cup (240ml) vegetable broth
- 1 cup (240ml) sour cream
- Salt and pepper to taste
- Fresh parsley, chopped, for garnish
Instructions
- In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent.
- Add the minced garlic and sliced mushrooms to the skillet. Cook until the mushrooms are tender and have released their liquid.
- Sprinkle the Hungarian sweet paprika over the mushrooms and stir to coat evenly.
- Pour in the vegetable broth and simmer for 10 minutes, allowing the flavors to meld.
- Stir in the sour cream and season with salt and pepper to taste. Cook for an additional 5 minutes.
- Garnish with chopped fresh parsley before serving.
