Hungarian Plum Cake (Szilvás Pite)

Ingredients

  • 2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1/2 teaspoon salt
  • 1/2 cup cold unsalted butter, cut into small pieces
  • 1/4 cup cold water
  • 2 lbs ripe plums, pitted and sliced
  • 1/4 cup granulated sugar
  • 1 teaspoon ground cinnamon

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large bowl, combine the flour, 1/2 cup sugar, and salt. Cut in the butter until the mixture resembles coarse crumbs.
  3. Gradually add the cold water, tossing with a fork until the dough holds together.
  4. Divide the dough in half. Roll out one half to fit the bottom of a 9x13 inch baking dish.
  5. In a separate bowl, toss the plums with 1/4 cup sugar and cinnamon. Spread the plum mixture over the crust in the baking dish.
  6. Roll out the remaining dough and place it over the plum filling. Press the edges to seal and cut slits in the top crust to vent steam.
  7. Bake for 40 minutes, or until the crust is golden brown.
  8. Allow the cake to cool before serving.
