Hungarian Plum Cake (Szilvás Pite)
Szilvás pite, or Hungarian plum cake, is a traditional dessert that is popular in Hungary, especially during the late summer and early autumn when plums are in season. This delicious cake is made with a flaky pastry crust and a sweet-tart plum filling, making it the perfect treat for any occasion.
Ingredients
- 2 cups all-purpose flour
- 1/2 cup granulated sugar
- 1/2 teaspoon salt
- 1/2 cup cold unsalted butter, cut into small pieces
- 1/4 cup cold water
- 2 lbs ripe plums, pitted and sliced
- 1/4 cup granulated sugar
- 1 teaspoon ground cinnamon
Instructions
- Preheat the oven to 375°F (190°C).
- In a large bowl, combine the flour, 1/2 cup sugar, and salt. Cut in the butter until the mixture resembles coarse crumbs.
- Gradually add the cold water, tossing with a fork until the dough holds together.
- Divide the dough in half. Roll out one half to fit the bottom of a 9x13 inch baking dish.
- In a separate bowl, toss the plums with 1/4 cup sugar and cinnamon. Spread the plum mixture over the crust in the baking dish.
- Roll out the remaining dough and place it over the plum filling. Press the edges to seal and cut slits in the top crust to vent steam.
- Bake for 40 minutes, or until the crust is golden brown.
- Allow the cake to cool before serving.
