Hungarian Poppy Seed Roll (Mákos Bejgli)
Mákos Bejgli is a traditional Hungarian pastry filled with sweet poppy seed paste, typically enjoyed during the Christmas season. This recipe yields a delicious, flaky roll that is perfect for sharing with family and friends.
Ingredients
- 2 cups all-purpose flour
- 1/4 teaspoon salt
- 1/4 cup granulated sugar
- 1/2 cup unsalted butter, cold and cubed
- 1/2 cup sour cream
- 1 cup ground poppy seeds
- 1/2 cup milk
- 1/2 cup honey
- 1/2 cup raisins
- 1/4 cup chopped walnuts
- 1 teaspoon vanilla extract
- 1 egg, beaten (for egg wash)
Instructions
- In a large bowl, combine the flour, salt, and sugar. Cut in the cold butter using a pastry cutter or fork until the mixture resembles coarse crumbs.
- Stir in the sour cream until the dough comes together. Divide the dough into two equal parts, shape into discs, wrap in plastic wrap, and refrigerate for 30 minutes.
- In a saucepan, combine the ground poppy seeds, milk, honey, raisins, chopped walnuts, and vanilla extract. Cook over medium heat for 10-15 minutes, stirring frequently, until the mixture thickens. Remove from heat and let it cool.
- Preheat the oven to 350°F (175°C). Roll out each dough disc into a rectangle. Spread the poppy seed filling evenly over the dough, leaving a small border around the edges. Roll up the dough tightly, pinching the seams to seal.
- Place the rolls on a baking sheet lined with parchment paper. Brush the tops with beaten egg for a golden finish.
- Bake for 30-35 minutes, or until the rolls are golden brown. Let them cool before slicing and serving.
