Hungarian Poppy Seed Roll (Mákos Bejgli)

Ingredients

  • 2 cups all-purpose flour
  • 1/4 teaspoon salt
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, cold and cubed
  • 1/2 cup sour cream
  • 1 cup ground poppy seeds
  • 1/2 cup milk
  • 1/2 cup honey
  • 1/2 cup raisins
  • 1/4 cup chopped walnuts
  • 1 teaspoon vanilla extract
  • 1 egg, beaten (for egg wash)

Instructions

  1. In a large bowl, combine the flour, salt, and sugar. Cut in the cold butter using a pastry cutter or fork until the mixture resembles coarse crumbs.
  2. Stir in the sour cream until the dough comes together. Divide the dough into two equal parts, shape into discs, wrap in plastic wrap, and refrigerate for 30 minutes.
  3. In a saucepan, combine the ground poppy seeds, milk, honey, raisins, chopped walnuts, and vanilla extract. Cook over medium heat for 10-15 minutes, stirring frequently, until the mixture thickens. Remove from heat and let it cool.
  4. Preheat the oven to 350°F (175°C). Roll out each dough disc into a rectangle. Spread the poppy seed filling evenly over the dough, leaving a small border around the edges. Roll up the dough tightly, pinching the seams to seal.
  5. Place the rolls on a baking sheet lined with parchment paper. Brush the tops with beaten egg for a golden finish.
  6. Bake for 30-35 minutes, or until the rolls are golden brown. Let them cool before slicing and serving.
