Hunter's Stew (Jägertopf)
Jägertopf, or Hunter's Stew, is a traditional dish from Lower Saxon cuisine that is hearty, flavorful, and perfect for a cozy meal on a cold day.
Ingredients
- 1 kg stewing beef, cubed
- 3 tbsp vegetable oil
- 2 onions, chopped
- 3 garlic cloves, minced
- 3 carrots, sliced
- 3 potatoes, diced
- 200g mushrooms, sliced
- 2 cups beef broth
- 1 cup red wine
- 2 tbsp tomato paste
- 1 tsp dried thyme
- Salt and pepper to taste
Instructions
- Heat the vegetable oil in a large pot over medium heat.
- Add the beef cubes and brown them on all sides. Remove the beef and set aside.
- Add the onions and garlic to the pot and sauté until softened.
- Return the beef to the pot and add the carrots, potatoes, and mushrooms.
- Pour in the beef broth and red wine, then stir in the tomato paste and thyme.
- Season with salt and pepper, then bring the stew to a simmer.
- Cover and let it simmer for 1 hour, or until the beef is tender.
- Adjust seasoning if needed, then serve hot.
