Hyderabadi Dum Biryani (حیدرآبادی دم بریانی)
Hyderabadi Dum Biryani is a classic dish from the Muhajir Cuisine, known for its aromatic flavors and rich taste. This recipe combines marinated meat, fragrant basmati rice, and a blend of spices, all cooked together in the traditional dum style.
Ingredients
- 2 cups basmati rice, soaked for 30 minutes
- 500g chicken, cut into pieces
- 1 cup yogurt
- 2 onions, thinly sliced and fried until golden
- 4 tomatoes, chopped
- 1/4 cup fresh mint leaves
- 1/4 cup fresh coriander leaves
- 4 green chilies, slit
- 1/2 cup ghee
- 1/2 cup milk
- 1/2 teaspoon saffron strands
- Whole spices: bay leaves, cinnamon, cardamom, cloves
- Salt to taste
Instructions
- Marinate the chicken with yogurt, half of the fried onions, tomatoes, mint, coriander, green chilies, and salt. Let it sit for 1 hour.
- Boil the soaked rice until 70% cooked. Drain and set aside.
- Heat ghee in a large pot. Add the marinated chicken and spread it evenly.
- Layer the partially cooked rice over the chicken.
- Sprinkle the remaining fried onions, saffron-infused milk, and whole spices on top of the rice.
- Cover the pot with a tight lid and cook on low heat for 30-40 minutes, allowing the flavors to meld together in the dum style.
- Gently mix the layers before serving.
