Ingredients

  • 1 kg mutton, cut into pieces
  • 2 cups basmati rice, soaked
  • 1 cup yogurt
  • 2 onions, thinly sliced
  • 4-5 green chilies, slit
  • 1 tablespoon ginger-garlic paste
  • 1 teaspoon turmeric powder
  • 1 teaspoon red chili powder
  • 1 teaspoon garam masala
  • 1/2 cup ghee
  • Salt to taste

Instructions

  1. Marinate the mutton with yogurt, ginger-garlic paste, turmeric powder, red chili powder, garam masala, and salt. Let it sit for 2 hours.
  2. Heat ghee in a heavy-bottomed pan. Add the sliced onions and sauté until golden brown.
  3. Add the marinated mutton and cook on low heat until the meat is tender.
  4. In a separate pot, layer the soaked rice and the cooked mutton. Sprinkle with green chilies.
  5. Cover the pot with a tight-fitting lid and seal the edges with dough to trap the steam.
  6. Cook on low heat for 30-40 minutes until the rice is fully cooked and the flavors have infused.
