Hyderabadi Dum Pukht (حیدرآبادی دم پخت)
Hyderabadi Dum Pukht is a traditional Muhajir Cuisine dish that is slow-cooked to perfection, allowing the flavors to meld together beautifully.
Ingredients
- 1 kg mutton, cut into pieces
- 2 cups basmati rice, soaked
- 1 cup yogurt
- 2 onions, thinly sliced
- 4-5 green chilies, slit
- 1 tablespoon ginger-garlic paste
- 1 teaspoon turmeric powder
- 1 teaspoon red chili powder
- 1 teaspoon garam masala
- 1/2 cup ghee
- Salt to taste
Instructions
- Marinate the mutton with yogurt, ginger-garlic paste, turmeric powder, red chili powder, garam masala, and salt. Let it sit for 2 hours.
- Heat ghee in a heavy-bottomed pan. Add the sliced onions and sauté until golden brown.
- Add the marinated mutton and cook on low heat until the meat is tender.
- In a separate pot, layer the soaked rice and the cooked mutton. Sprinkle with green chilies.
- Cover the pot with a tight-fitting lid and seal the edges with dough to trap the steam.
- Cook on low heat for 30-40 minutes until the rice is fully cooked and the flavors have infused.
