Ibicenco Stuffed Peppers

Ingredients

  • 4 large bell peppers
  • 1 lb ground beef
  • 1 cup cooked rice
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon paprika
  • 1/2 teaspoon cumin
  • Salt and pepper to taste
  • 1/4 cup chopped fresh parsley
  • 1/4 cup grated Manchego cheese
  • 2 tablespoons olive oil

Instructions

  1. Cut the tops off the bell peppers and remove the seeds and membranes.
  2. In a large skillet, heat the olive oil over medium heat. Add the onion and garlic, and cook until softened.
  3. Add the ground beef to the skillet and cook until browned, breaking it up with a spoon.
  4. Stir in the cooked rice, paprika, cumin, salt, and pepper. Cook for another 5 minutes.
  5. Remove the skillet from the heat and stir in the chopped parsley and grated Manchego cheese.
  6. Preheat the oven to 375°F (190°C).
  7. Stuff the bell peppers with the meat and rice mixture and place them in a baking dish.
  8. Bake for 30-35 minutes, until the peppers are tender and the filling is heated through.
  9. Serve the Ibicenco Stuffed Peppers hot, garnished with additional parsley if desired.
